Eis




Eis is a Japanese restaurant in Albert Park which has been opened since August 2001.





Eis is the realisation of chef and owner Hiroyasu Aoki’s dream. The menu displays Aoki’s vision of simplicity and elegance while the interior is chic. We were pleased to be presented with a degustation curated by Aoki.







Salmon carpaccio sea salt lemon juice & basil paste







The carpaccio of salmon arrived as a plate of thinly sliced salmon topped with lemon juice & basil paste (not dissimilar to pesto). While not thoroughly resolved, it was an interesting dish in both texture and taste.





Crispy chicken wrap with cucumber, carrot & sweet soy sauce







Each portion of crispy chicken wrap was carefully prepared to ensure that each was fresh and warm when consumed. With a generous slice of crispy chicken, fresh cucumber, carrot and ample sauce, it boasted a crispy batter.







Grilled half eggplant with miso paste and spring onion







The dish of grilled eggplant was a homely and very tasty dish. The eggplant was adorned with caramelized miso which burst with umami and a melt-in-your-mouth texture.





Sashimi 




The sashimi was fresh and showcased technique.







Chicken teriyaki with grilled vegetable




The chicken teriyaki was tender and lacquered with a sweet soy teriyaki sauce.





Panko crumb fried banana, Ecuador 70% dark cacao chocolate with sesame and vanilla ice-cream




Eis’ take on the traditional banana fritter was rather lovely. The banana had a light and crispy batter and was soft and sweet inside. Served with creamy vanilla and sesame ice cream and drizzled with decadent dark chocolate, this was a pleasant end to our meal.  






Eis is a restaurant that seeks to unite a passion for good food and good service. The offerings stay true to the traditional Japanese way.

New winter menu @ Saké Restaurant & Bar

With a new seasonal menu just in time for the chilly winter season, Executive Chef Wayne Brown has brought Japanese food and culture to life at Sake with a unique menu that features contemporary sushi alongside traditional Japanese dishes.




Hattori Hanzo 





We commenced our evening with a couple of outstanding cocktails.  Sake’s signature cocktail, the Hattori Hanzo was wonderfully different and absolutely delectable.  Served in a goblet over ice with muddled cucumber and jalapeno shaken with gin, yuzu, freshly squeezed lemon juice and elderflower, the flavours were light, bright and clean with a slight kick from the jalapeno. 




Nigami 





Sake's take on the classic Negroni, the 'Nigami', was similarly enjoyable - a skilful composition of Japanese shochu, Aperol and sweet vermouth stirred with lemon bitters and a grapefruit twist. 




We also had the opportunity to sample some exquisite Japanese craft beer from their extensive list.




While Saké has you covered in terms of Japanese-inspired cocktails and craft beers, food and sake pairing is a key focus. This is based on the philosophy that different flavour elements in food can be altered when matched to the right sakes. 




Trained in sake appreciation, the exceptional staff happily guide guests through the extensive sake menu. We were pleased to indulge in their omakase menu matched to a range of premium imported sakes, which allowed us to experience the Japanese tradition of delicately balancing flavours.




With a range of styles featuring flavours ranging from floral and fruity to nutty and earthy, appreciating the subtle balance is something exciting that Sake is keen to share with diners.




Kingfish jalapeño yuzu soy, jalapeño slices & coriander


Matched with: Amabuki Junmai Daiginjo





The kingfish was a positive highlight. The thick slices of very fresh kingfish were served with yuzu soy, jalapeño slices and coriander. The dish was notable for the quality of the kingfish and the interplay between the tartness of the yuzu soy and perfect hint of spice from the jalapeño. It was a simple but well executed dish.






Wagyu new style thin slices of wagyu beef lightly seared with hot oil & finished with ginger, chives & yuzu soy


Matched with: Kozaemon Junmai Ginjo Bizen Omachi





The Wagyu dish contained delicate slices of rare Wagyu, served with a beautiful yuzu soy sauce. The accompaniments of ginger and chives worked wonderfully to draw out the robust beefiness of the Wagyu and enhance the meat with extra flavours. We adored the melt-in-the-mouth texture of the slices that had been perfectly cooked.




Steamed prawn dumplings 6 pieces of Chinese-inspired shumai with spicy ponzu





The steamed prawn dumplings prevailed in both taste and texture. Delicious prawn fillings were encased in a blissfully silken rice noodle casing and was an absolute delight when bathed in a mind-blowing spicy ponzu concoction. Possessing the perfect amount of heat and tartness, these dumplings certainly tantalised our taste buds.






Nasu dengaku - grilled eggplant, caramelized miso





One of our favourite courses from our evening was the dish of grilled eggplant. It was a well-conceived dish that took full advantage of the eggplant’s most notable characteristic – its supple flesh. The thick pieces of eggplant were adorned with caramelized miso.  The creamy eggplant flesh melted in the mouth in a manner similar to unctuous pork fat. This gem of a vegetarian dish was one that commanded respect.




Fragrant duck breast, red den miso, snow pea tendrils, mikan marmalade


Matched with: 2013 Pinot Noir from our good friends Tarra Warra





The slices of duck breast were cooked to a rarely found perfection, allowing the rich flavour of the duck to shine through. The umami-laden miso worked well with the sweet and sticky mikan marmalade. Together, they provided the crowning element to this luxurious dish.




Soft shell crab tempura, ponzu gel, kohlrabi remoulade


Matched with: Ryukyu Awamori Shochu





A commendable modern rendition of a traditional Japanese dish, the batter was ethereally light and crispy. The soft shell crab which sat within the batter was fresh and most memorable. The tangy ponzu sauce was the perfect accompaniment which cut through the rich oiliness while the kohlrabi remoulade provided a refreshing interlude between the tempura pieces.






Sushi moriawase





The nigiri was expertly crafted and the plump, pieces of fish were incredibly fresh. It is clear that Saké is using only the freshest, highest quality seafood.






Goma


Matched with: Kokuto Umeshu





Pleasing to both the eyes and palate, this dessert of caramelized white chocolate, chocolate mousse sesame praline and sesame ice cream was simply outstanding. The mellow, milkiness of the white chocolate paired exceptionally well with the creamy mousse. Eaten together with the sesame ice cream, this dessert was the most balanced of flavour explosions and textures. An exemplary display of Saké s versatility.

#GastrologyInBarcelona - Negro-Rojo - Charisma and gastronomic vigour in the Barcelona CBD

Located within the central business district of Barcelona, Negro-Rojo combines international and Japanese cuisine in two distinct levels that stand out for their impressive design and culinary offerings. 




We were pleased to indulge at Negro the level which houses modern International cuisine with Mediterranean influences. 




The scene is set with a sleek black designer kitchen which boasts Mediterranean and oriental characteristic and large window which allow natural light to flow into the cavernous space. T central chiaroscuro creates a cosmopolitan and modern environment, making it ideal for lunch or dinner in the evening.




Chicken and ham croquettes





The croquette had a wonderfully crisp exterior which combined beautifully with the tender chicken and ham which provided salinity to the dish.




Grilled squid with romesco





We adored the presentation of this dish and loved the flavours even more. The quality of the squid was exemplary. The perfectly cooked squid was adorned with slightly tart and refreshing romesco. A Mediterranean dish which allowed the natural sweetness of the squid to shine.






Spicy sea bass ceviche 





The ceviche was a wonderful mélange of different textures, natural sweetness and acidity. Titbits of fresh cured sea bass were embellished with thinly sliced onions while a sprinkling of fresh herbs added the final touch to an enlivening combination of ingredients.




Grilled octopus with potatoes 





This dish was an absolute highlight of our meal. Simply named grilled octopus with potatoes, the dish delivered over and above its humble appearance. The octopus was incredibly tender while retaining a robust structure courtesy of being expertly cooked. The accompanying smashed potatoes were creamy, well-seasoned with a lovely underlying extra virgin olive oil flavour. It was perhaps one of the most memorable dishes we tasted in Barcelona. 






Shanghai Duck





The dish of Shanghai Duck had us fighting for the last morsel. The delicate thin pancakes were a lovely canvas for the velvety duck flesh and its perfectly crisp skin.




Apple Tart





Buttery crumbly pastry is filled with a luscious apple served with vanilla bean ice cream for a refreshing contrast.  It was a hearty dessert that was perfect for a splendid finish. 




Negro-Rojo draws in the crowd with its unique experience. Dine in an atmosphere full of charismatic and playful contrasts while being seduced by delicious international cuisine. You will not be disappointed.

Mr Miyagi

Drawing influence from the izakaya style of Japanese eating and drinking, Mr Miyagi offers a compelling proposition - stylish, laid back surrounds, a diverse drinks list and a clear focus on serving up delicious, playful dishes.




The decor fuses modern, grungy elements with traditional Japanese design to produce a cohesive whole. 






Specialising in Japanese and Pan-Asian share plates, the food served ranges from creative and contemporary such as nori tacos and tuna tataki pizza, to Japanese classics such as sashimi, nigiri and yakitori.




Nori taco  - grilled salmon belly, vinegar rice, spicy napa cabbage, Japanese mayo, chilli oil





Mr Miyagi’s pièce de résistance, the Nori taco was mind-blowingly good. The crisp taco shell of tempura nori sheets was filled with perfectly seasoned sushi rice, tangy kimchi, rich salmon adorned with chilli oil and Japanese mayonnaise. With all ingredients in perfect harmony, every bite was a feast for the senses - a stunning dish.




Tempura broccoli 





Another highlight was the tempura broccoli. The soft broccoli was encased in ethereally light and crispy tempura batter. Generously covered with a layer of grated cheese, this dish was vegetarian comfort food and would make anyone with a distaste for broccoli reconsider.




“MFC” - Miyagi Fried Chicken





The famous MFC lived up to expectations. Each morsel of fried chicken was tender, juicy and distinctly flavoursome. We loved how this crispy bar staple was done impeccably well without compromise.








Kabocha pumpkin toast – white chocolate and pumpkin ganache, honeycomb, yoghurt sorbet and pumpkin ice cream





Our favourite dessert of the evening, the kabocha pumpkin toast can best be described with one word - wow. The scattered presentation was an artistic mix of order and chaos. The bursts of tartness from the yoghurt sorbet worked well with the creamy white chocolate and pumpkin ganache while the honeycomb provided a wonderful textural element. A fantastically delicious amalgam of unlikely ingredients, the kabocha pumpkin toast is a must try for any visitor of Mr Miyagi.




Combined with a vibrant atmosphere, diverse beverage selection and warm staff, Mr Miyagi is an exciting foodie destination and has certainly earned our stamp of approval.
